Easy Peasy Tomato and Cannellini Bean Soup

Tomato and Cannellini Bean Soup

This soup came about on an evening I had had a really busy day and couldn’t be bothered spending too much time on dinner. I threw everyone into a high powered blender and simply heated it on the stove and added the beans. Super simple, yet super tasty!

Serves 2

 

What you need

1 can of diced tomatoes

4 large tomatoes

1 large red onion

1 glove of garlic

1 tablespoon of apple cider vinegar

1 tablespoon thyme leaves

1 teaspoon of powered vegetable stock

1/4 cup of water

salt and pepper to taste

1 can of Cannellini beans

Squeeze and lemon and balsamic to serve


What to do

Place everything but the Cannellini beans into the jug of a high powered blender and blend until smooth.

Pour the soup into a medium sized pot and heat through. Add the beans and heat for about a minute more.

Divide between two soup bowls and garnish with mini tomatoes, fresh thyme and a squeeze of lemon or balsamic.
