Chocolate and Chia Cookies

For when life goes a bit pear shaped, shove a couple of these in your face and all of a sudden things don't seem so bad.

Makes 16

 

what you need

3/4 cup of buckwheat flour

1/4 cup of potato flour 

1 cup of almonds

1 cup of pecans

1/3 of a cup of pure maple syrup

5 medjool dates

1/4 cup of coconut sugar

1/4 of a cup of water

2 generous tablespoons of raw cacao

2 tablespoons of chia seeds

2 tablespoons of coconut oil

1/4 cup of water


what to do

To make the cookies place the nuts into a food processor and blend for a minute or two until a flour forms, then add all of the remaining ingredients and blend again until a cookie dough forms. It will be pretty sticky but it’s supposed to be. 

Scoop about a tablespoon into your hands, roll it into a ball and then flatten it into a round about  half a centimetre thick. Repeat until all the dough is used up. It helps if you cover your hands in coconut oil when forming the cookies as they won’t stick to your hands.

Bake for about twenty minutes at 180C, until the cookies are firm and starting to slightly brown. 

Then leave them to cool for a few minutes before enjoying!
